I’m having a bourbon moment, clearly. It just feels so much more wintery than vodka or champagne cocktails. I made this for my friend’s baby shower, quadrupled and served with an ice ring in a vintage punch bowl. It was hilarious to see grown men lining up near the bowl, tiny glass punch cups in hand. Even friends who swear they don’t like bourbon were won over by this; I think the Pimm’s tempers its bite.
I adapted this recipe from Mrs. Lilen’s Cocktail Swatchbook, a very clever little book of drinks. The recipe in the book was extremely strong, so I toned it down just a bit.
Bourbon and Pimm’s Cocktail
Serves four to six
1 cup Bourbon
1 cup Pimm’s Liqueur
1/2 cup simple syrup
1/2 cup lemon juice
1 cup sparkling lemon-flavored water or soda
mint leaves to garnish
Mix ingredients together and serve in a glass with ice. I love these large round cubes- they take forever to melt so they don’t water down your drink. Plus, they look cool!
I may have to make these again this weekend. They would be great to sip on while watching “Girls.” (Are you all watching “Girls”? I am obsessed!)






Yes, those were so very tasty. I really should make them again, but definitely add the lemon soda. Boy were they stong before that!
